Basic pancake mix
- 125g plain flour;
- pinch salt;
- 1 egg;
- 250ml semi-skimmed milk;
- 1 tbsp butter, melted then slightly cooled;
- 1 splash vegetable or sunflower oil, for frying
METHOD: Sift the flour and salt into a bowl. Create a well in the centre and add the egg with about a third of the milk and all of the melted butter.
Combine everything with a whisk , it’s easier with an electric one.
Once all the flour is incorporated, add the remaining milk and, using your whisk, combine it all.
Transfer to a jug and rest in the fridge for at least 30 minutes. To make a classic pancake, heat a tiny bit of oil in a non-stick frying pan, just to coat the pan. The pan must get very hot (you’ll start to see smoke) before you add any batter.
Add about a ladleful of pancake batter and swirl it about to cover the bottom of the pan. Turn the heat down slightly and cook through on both sides until golden.
Use a spatula to turn it, or flip it gently with a flick of your wrist if you’re feeling lucky. Repeat with the rest of the batter. Serve immediately with your favourite topping.

At TESCO a 1.5kg bag of plain flour is 60p.
MORRISONS has a cracking deal for 12 large free-range eggs for £1.70, down from £2, while Aunt Bessie’s Family Size Pancake Mix, 480g, is now £1, saving you 50p.
SAINSBURY’S Pancake Shaker Batter Mix, 155g, is £1. For allergy sufferers, ASDA’S Free From Pancake Shaker is £1.20.
Banana & cinnamon pancakes
- Ingredients for basic pancake mix;
- 1 tsp baking powder;
- ½ tsp ground cinnamon, plus extra to serve;
- 6 tsp golden caster sugar;
- 1 tsp vanilla extract;
- 2 large bananas, sliced, plus extra to serve;
- 2 tbsp vegetable oil, for frying;
- 6 tbsp low-fat Greek-style yoghurt
METHOD: When making the basic pancake mix recipe (left), leave out the salt and add the baking powder, cinnamon and sugar to the flour, then add only 100ml milk as well as the vanilla extract. Rest in the fridge for at least 30 minutes.
Mash the banana into the batter and stir through the mix. Heat a little oil in a frying pan then add 2 tbsp of the batter. Cook the pancakes on both sides.
Once cooked, set aside and keep warm then continue with the rest of the pancake batter.
Serve immediately with banana slices and 1 tbsp Greek-style yogurt and a sprinkling of ground cinnamon.

Save on Buckwud 100% Pure Canadian Maple Syrup, 250g, at WAITROSE, down from £6 to £4.50.
SAINSBURY’S Chocolate Caramel Spread, 400g, is £1.60.
- Ingredients for basic pancake mix;
- 3 oranges, peeled and sliced into rings;
- 50g pistachio kernels, chopped;
- 150ml crème fraiche;
- 150ml chocolate sauce
METHOD: Cook the pancake batter as directed in the basic pancake mix, far left, stack the cooked pancakes and keep warm.
To assemble, take a pancake from the pile, arrange a few slices of orange over the base and fold into quarters.
Top with a few more orange slices, scatter with pistachios if using, then add a dollop of crème fraîche and finally drizzle with chocolate sauce.
