A SINGLE mum has revealed an easy and cheap recipe to feed a family of four for less than £2.50. 

The busy mum, who goes by the name of This Mum Cooks on TikTok, says it’s the perfect recipe for those struggling to keep up with the costs of living. 


In the video, which she shared to her 122k followers, she says: “The main purpose for my page has always been to support people to eat well for less how to shop and cook on a budget.

“For many months lots of people talked about the cost of living crisis and how much food was increasing in price but I feel that that narrative has fallen away somewhat.

“Recently however, it has gotten no easier being able to afford to feed families and it doesn't look like it's going to get any better anytime soon.

“However, there are still ways that you can feed your family really well on a budget. This is a delicious three main ingredient family meal for four for less than £2 50 – the ingredients are all bought from Marks and Spencer.

“I've used a third of a bag of their potatoes that cost £1 for two kilos, don't bother to peel them, just give them a really good wash and thickly sliced.

“Then I've got 450 grams of carrots, that cost me 22p, again wash or peel and give these a good slice.

“Finally I'm using the chicken leg pieces from Marks and Spencer. 600 grams is 1 pound fifty, cooking these in the slow cooker while still on the bone but I am removing the fat.

“It will mean that the meat will just fall off the bone and all of the goodness from the bone will go into the stock as well from my pantry.

“I've got a Turkey stock cube leftover from last Christmas and I'm seasoning it with salt, pepper and covering it with water.

“Then just a sprinkling of thyme that I had in the pantry and cook this on low until about an hour before you are ready to serve.

“Then remove the chicken from the bones and add some corn flour to the stock, this will make a delicious gravy, add back the chicken and leave until you're ready to enjoy.”

The video attracted thousands of people liking it, and many rushed to the comments section to share their thoughts. 

One wrote: “We do similar with the Turkey at Christmas. Carrots, sweetcorn, onion & pearl barley. Nice crusty bread.”

To which she replied: “Oh no, I should have added pearl barley, I have some in the Pantry!!”

Another added: “I grew up on casseroles! I adore them now & regularly make them for my toddler. Best food ever & so nutritious & cost effective!” 

A third said: “M&S have some bargains, I got the wings for a quid or two. Some stuff cheaper than other supermarkets.”
