I've lost 100 lbs and still eat tacos – seasoning is key and my cooking method makes them crunchy but not fatty | The Sun

A WEIGHT loss champion has said the secret to his success was delicious food all the way.

He lost 100 pounds while still eating tacos, that were deliciously crunchy but not fatty.

But seasoning that added lots of flavor was key in his recipe ideas.

“Let’s make my favorite crunchy tacos that I was eating on my 100 pounds weight loss," said Benji Xavier (@benjixavier) with obvious relish.

He has a following of 3.6 million on TikTok where he has chronicled his weight loss journey and lip-smacking good meal ideas.

In this post, it was all about his tacos and his method that one commenter described as "freaking genius."

First, he added chicken breasts to a pot of water adding seasoning that allowed the meat to absorb some of the flavor.

To this, he added some chicken bouillon, a quarter of an onion, some minced garlic, a few peppercorns, and a little bit of salt, then "we’re going to boil it until it’s fully cooked."

When the chicken was ready, Benji shredded it and sprinkled even more seasoning, including chicken bouillon, garlic powder, onion powder, and salt to taste.

There was more to this flavor-packed meal: "I’m going to add some lime juice, half a cup of fat-free American cheese, and three tablespoons of fat-free Greek yogurt."

Next came his special method for crunchy tortillas.

“So we’re going to take some low-calorie corn tortillas and warm them up for a few seconds in the microwave so that we’re able to roll it up without breaking.

“I’m going to take about an ounce of chicken mixture and put it onto the tortilla and we’re just going to start rolling it up.

“I’m just going to lightly spray them with some olive oil and throw these in the air fryer to cook. These are done," he said, crunch factor achieved.

With a final flourish, he topped the dish with some light sour cream and green salsa.

His meal idea had the effect of stimulating the taste buds of viewers.

“Thank you. I refuse to give up my fave foods to lose weight," said one person.

“Freaking genius," exclaimed another. "I was dreading the frying process, glad I watched all the way through.”

And a third person wrote: “I’ve been going through a weight loss problem too. I really do like watching you and talking about the different ways you can make meals.”
