Daily Star has a taken a closer look at where the actress behind Courtney went.
Soap exit
Amy joined Hollyoaks in 2015 as Courtney Campbell and soon became embroiled in a number of high-profile storylines.
This included becoming a murder suspect, giving birth to Iona Donovan and her marriage to Jesse Donovan before his tragic death.
However in 2021, fans were devastated when the actress announced that she was leaving the soap after more than five years.
Amy's exit storyline saw her character Courtney accept her dream job as a Headteacher at a school in Scotland, with the actress telling Digital Spy: "I suppose it was my choice to leave, but it was more that I wanted to go out on a high. I'd been on the show for five years and it felt like a nice, round number.
She continued: "The training that I got at Hollyoaks was probably the best job that I could have done so early in my career.
"Even though it was me that said it was maybe the right time to do something else, it was still very much a hard decision for me because Hollyoaks was just the best job ever."
Amy concluded: "It's a one-of-a-kind opportunity when you're an actor, to go to the same place every day, see the same people and play the same character.
"But it just felt like the right time for me to leave… although I'll let you know in about six weeks' time if I still feel the same way!"
Stage roles and steamy play
Since her soap exit, Amy has kept very busy both on stage and on screen.
In the same year, the actress appeared as Karen in TV drama Crime, before playing Mo in 2022's Grace and DC Erin Foster in The Capture.
She also played Kirstie in Karen Pirie.
That's not all, as Amy joined The National Theatre of Scotland in their musical adaptation of Orphans and shared her excitement for the new role with The Sunday Post.
"It’s definitely a new challenge for me, adding: "I feel once I’ve done it I’ll be very proud because it’s something new and something I’ve been a bit scared about for a long time."
She also appeared in Wendy Hoose, a steamy sex comedy about the awkward relatieis of sex and disability.
It's about a one-night stand between two young people, Jake and Laura, who hook up after meeting on a dating app.
Disability
During her Sunday Post interview, Amy explained that she wants to see more people with disabilities in leading acting roles.
The actress was born with a spinal condition and uses a wheelchair, explaining that she became the first person in a wheelchair to graduate from her course at the Royal Conservatoire in Scotland.
Speaking to Disability Horizons, Amy also said that there is more representation in the acting industry nowadays, but hopes that there will be further change in the future.
"Not only do we see much more diversity on our screens, but we also see different kinds of stories being told. We’re not always the victim anymore," she said.
"Of course, I think we still have a way to go. I would like to see more disabled characters in positions of power. More disabled actors in lead roles (I’m available…) and more stories of interesting people who just happen to be disabled.
"We’re always moving forward though and I’m excited to be a, relatively, young disabled actor in the industry today."
Private life
Away from our screens, Amy tends to keep her personal life private and not much is known about the star.
However she still keeps in touch with her Hollyoaks co-stars, who she formed close bonds with on the soap.
Speaking to Digital Spy, the actress revealed she is still in touch with Luke Jerdy who played Jesse and is very close to Jessamy Stoddart who plays Liberty, saying: "She'll be one of my best friends forever.
"We still talk most days, so I'm not going anywhere and she's stuck with me, unfortunately!"
