A MONEY-SAVING mum has revealed how you can feed a family-of-four for under a fiver – and the recipe is ideal for the hot weather.

The cost-of-living crisis has affected many cash-strapped families across the UK and the world – but luckily, one mum has come to rescue with an easy and budget-friendly recipe.


The savvy parent, Nicola Metcalfe, took to TikTok to reveal how you can whip up a delicious meal for less than £5 using bargain buys from Aldi.

''This is a nice and light meal perfect for the hot weather,'' the mum said in her video before sharing her shopping basket.

Whilst at the store, Nicola snapped up the essentials for the recipe – these included a bag of mixed lead salad (57p), bacon rashers (£1.45), a large pack of coleslaw (£1.19), some mozzarella (69p), as well as four baking potatoes (92p).

According to the shopper, the total of this came to £4.82, working out to a little over £1.20 per portion.

The first step, the savvy foodie went on to demonstrate, was washing and stabbing the spuds with a fork before chucking them in the microwave.

''Because they were so large, they took around 23 minutes in total,'' Nicola added.

Whilst these were cooking, she fried smaller chunks of bacon in the pan, chucking in all the ''fussy bits'' too, as they add flavour.

Nicole also prepared the salad by finely chopping the leaves and giving them a good wash, before mixing in the creamy coleslaw in the bowl too.

''It just makes the leaves a little bit more interesting,'' the mum-of-two explained.

Once the potatoes were finally ready, Nicola cut them in half and scooped out all the inside, placing it in a separate bowl.

For the filling, as the potato skins were resting on a baking tray, the food fanatic added some butter and a tiny bit of milk.

''I then put half of the bacon pieces into the mashed potato and gave it a really good mix.

''I then scooped all of this back into the potato skins.''

Before placing the tray in the over for 15 minutes, Nicola also topped it off with slices of mozzarella cheese and bits of bacon.

''And there you have it – loaded bacon potato skins with coleslaw and salad.''

Fellow foodies raced to comments, where one said: ''Love these videos this looks so yummy the 5 pound meals have helped me so much lately as I’m just been mad redundant so thank you for sharing.''

Someone else advised: ''try using Tesco cooking bacon. 500g for 90p!''
